Immersion blenders are sometimes known as “boat motors,” and the resemblance is uncanny. These kitchen tools are long, stand-up blenders that look like something you’d find on a seafaring vessel, but are actually a great choice for small- to medium-sized blending jobs.

I use an immersion blender to bring chunky soups together, or mix soft fruit for a topping for a morning superfood bowl. Immersion blenders also come in handy for soft batters — think pancakes — and reduce the need to get out the full-size stand-up mixer. If you have the right immersion blender in tow, it’s actually a very versatile kitchen tool that you'll want use on a regular basis. (Immersion blenders are also a great option for small kitchens with limited space.)

    Vitamix’s immersion entrant is a powerful, five-speed blender with sturdiness, performance and a quality build. The Vitamix is stainless steel throughout (compared to mixed materials on other models) and has a really comfortable, ergonomic grip.

    I thought the power distribution of this model was pretty good. I didn’t get sudden jolts of power while shifting between speeds or on and off. I also thought the quality of the blending was pretty congruent even in tougher batches with a thicker texture.

    Vitamix’s immersion blender definitely feels as well-built as anything on this list, and is most comparable to Breville’s offering (minus the included attachments). Vitamix does sell attachments separately, and they’re affordable, so it makes the solo buy here much more palatable.

    Although the Breville option isn’t the most powerful immersion blender out there, I loved the way that it uses the power it does have. It only felt lacking with the heavier, thicker batches where the Vitamix would generally pick up the slack.

    Another thing I love is the included accessories actually work. The whisk makes easy work of whipping and egg beating while the food processor handles small chopping jobs with aplomb. It also feels just as well-built as the Vitamix and is a very close #2 on the list. In most cases, the differences between the Breville and Vitamix options are minimal.

    The only issue is that with this much range comes the potential to make a mess if you’re not using a wide, high-sided bowl. When getting started with the Ganiza, work slow and measured as you gain speed and understanding — your kitchen counters will thank you.
